Catherine Fox received her bachelor of science in clinical and community dietetics from the University of Gainesville in 1977, and her master of science from the University of Kansas in 1999.

She specializes in pediatric nutrition with an emphasis on nutrition in children with special health care needs such as autism, metabolic disorders such as cystic fibrosis and phenylketonuria (PKU) . She has also been a member of the KU Pediatric Feeding team since 1992.
