Heather Gibbs, PhD, RD, has practiced as a registered dietitian since 2000 in areas including inpatient and outpatient medical nutrition therapy, telehealth-delivered medical nutrition therapy, and undergraduate nutrition and/or dietetics education. Gibbs teaches courses DN825 Medical Nutrition Therapy I and DN 826 Medical Nutrition Therapy II.
After earning a bachelor's degree in nutrition and dietetics in 1999 from Olivet Nazarene University, Bourbonnais, Ill., Gibbs completed her dietetic internship at Ball Memorial Hospital in Muncie, Ind. She continued her studies at the University of Kansas, earning a master's degree in dietetics and nutrition in 2003. While working as an instructor and later as assistant professor at Olivet Nazarene University from 2004-2012, Gibbs completed her doctorate in food science and human nutrition at the University of Illinois at Urbana-Champaign in 2012. She joined the KU Department of Dietetics and Nutrition in January 2013.
Gibbs' research interest focuses upon nutrition education, with particular interest in nutrition literacy, or the capacity with which individuals can use nutrition information to make healthy dietary choices.
